One of the biggest school dilemmas parents face is the lunchbox. We want our children to have nutritious options but we also know they have to want to eat it. I would add that those of us doing the packing would like these meals to be simple to prepare. Is it asking too much? I don’t think so and hopefully you won’t either by the end of this.

I have found the best way to get the kids to eat what you pack is by letting them in on the whole endeavor. My little ones enjoy going food shopping with me to pick out what goes in their lunches. They look forward to this time with Mommy and making grown-up choices at the store!

Once the food is picked out it is time to get creative and put together combinations they will love. I try to make well-balanced lunches that will help the kids power through the rest of their school day.
