From the President's Pasture:
Our position on organic standards
You've probably heard a lot in the media lately about the national organic standards supposedly being under assault by "big organic". While it’s true that the entry of some of the world's largest companies, many of which have been known for their singular focus on profits at all costs, means that those of us with a genuine commitment to the spirit of organic must be more vigilant than ever, we nevertheless are on the side of the organic industry in this instance.  Rather than tell you why myself, I thought that this editorial from my local paper said it better than I could. Thank you to
The Concord
(New Hampshire) Monitor
for allowing us to link to its editorial, which originally appeared November 28, 2005. Gary Signature

P.S. In our case, Stonyfield uses two key non-organic ingredients because organic alternatives don’t exist.  One is pectin, which is made from fruit peels. The other is our yogurt cultures, which cannot be certified as organic because they are grown in a specialized environment requiring a specific food source.  Together these two ingredients account for less than 0.15% percent of our products, which is well below the 5 percent allowance. We have been and will continually explore for the best quality organic sources to replace non-organic flavors, colors and ingredients.

P.S.S.  Here's hoping that your holidays are filled with hope and health as we look to the new year. Best wishes from all of us at Stonyfield Farm!

Speaking of organics…
You may have heard that Prince Charles made a tour through the United States recently.  One of the things he did was visit an organic farmer’s cooperative. He’s a big fan of organics. You can listen to a radio broadcast here with the farmers who were included in this historic meeting.

Eating A Stonyfield Yogurt A Day Keeps the Doctor Away?
Enhance your natural defenses

One 6-ounce serving of Stonyfield Farm yogurt or cultured soy contains inulin, which has been shown to enhance the body’s natural defenses. Inulin has immune benefits, plus it is a natural dietary fiber.  The fiber can help boost calcium absorption and is clinically shown to increase bone density while promoting digestive health.  In a study done in 2002 by Johns Hopkins Hospital, infants who were fed a cereal containing inulin had fewer absences from daycare, fewer doctor visits, less antibiotic use and fewer incidents of fever. The amount of inulin consumed by the infants in the study is the same amount as contained in just one of our 6-ounce yogurts or cultured soys. Inulin and the six live active cultures Stonyfield Farm products can boost your immune system. Read more about it! Maybe you’ll head into a healthier new year.

Healthy Party Pleasers
Display a tray of health at the next holiday event
It’s the party season.  If you worry about facing tables full of unhealthy food at every bash, why not contribute your own healthy dishes for a fun party?

Fruit Platter
A wonderful way to serve a light healthy appetizer, breakfast plate or afternoon snack. The lovely colors of the fruit give this great eye appeal, plus it goes great with wine or champagne! Set it out on your appetizer table for a healthy blast of fun and color.  Your guests will be surprised to discover yogurt in the dipping dish.

Ingredients
Stonyfield Lots of Lemon Yogurt

Various fruits: best selections are seasonal fruits that are firm, not to sweet, no peeling required.
            Bosc pears
            Asian pears
            Gala apples
            Whole strawberries
            Honey dew melon
            Nectarines
            Red grapes
            Optional:  mango, kiwi, star fruit

Directions
Wash and slice selected fruits into large slivers. Arrange on a platter around a small dipping dish of Stonyfield Farm Lots of Lemon Low Fat yogurt. Add small groups of red grapes to fill in the gaps. Add sliced sharp cheeses for variety.

Crunchy Yogurty Party Pretzels
Follow the three steps below to make Crunchy Yogurty Party Pretzels for a delicious party food, snack, or dessert. These are lower in fat than the store-bought variety and if you prefer less sugar, you can leave some out of this recipe. Kids love to help with the dipping!

Ingredients
3 cups Stonyfield Farm Lowfat Plain yogurt (makes 1 cup yogurt cream cheese)
1/4 cup butter
3 cups powdered sugar
2 tsp vanilla extract
1 bag fat free medium-sized pretzels, for dipping (salted pretzels are fine)
1 tsp cocoa powder (optional) or 1 tsp cinnamon (optional)

Sprinkles, if desired

Tools
Colander
Cheesecloth
Heavy saucepan
Rubber spatula
Wax paper

Directions

1) Make Yogurt Cream Cheese

Place 3 cups of Stonyfield Farm low-fat yogurt into a colander lined with cheesecloth and place colander over a large bowl to drain. Refrigerate overnight.

2) Prepare the Pretzel Dip
Combine yogurt cream cheese and butter over low heat. Remove from heat and slowly stir in sugar. Add cocoa or cinnamon if desired. Stir until creamy. If the mixture becomes too thick, add a tiny amount of water.

3) Dip the pretzels
Dip pretzels one by one into the sauce before it cools fully.  Lay pretzels on waxed paper. Add sprinkles if desired. Store in refrigerator until served.
